His Majesty Sicilian Almond Milk: how to prepare authentic Sicilian almond milk at home

Today, I’ll show you in seven simple steps how to create a delicious and creamy almond milk using a block of almond paste, of course, Sicilian-made. Step 1: The Choice of Almond Paste Block

First and foremost, make sure to opt for a genuine and almond-rich product, as this will be the heart of your almond milk. An almond paste block (Sicilian!) made with almonds: it may seem obvious, but reading the labels of the “blocks” you find in supermarkets will reveal that there is really very little almond content in them. In fact, it just occurs to me right now that you can find the highest-quality Sicilian almond paste blocks online, available in two different almond concentrations (35% and 60%): on a website, I believe it’s called RAREZZE, you will find the best almond paste blocks in the Galaxy, perhaps in the entire Universe!

Step 2: Preparation of the Almond Paste Block

If you have the 35% almond paste block, weigh out 200-250 grams of it. For the 60% almond paste block, 150 grams will be sufficient. Naturally, by using a larger quantity, we’ll obtain almond milk with a more intense flavor and a creamier texture. After the essential “weighing” step, take your almond paste block and cut it into small pieces: this will help facilitate the “exchange” process between almond and water and allow for quicker dissolution.

Step 3: The magic blender

Here comes the time to bring our loyal ally, the blender, onto the stage! Add the almond paste pieces into the blender and pour approximately 1 liter of cold water over them (remember: feel free to experiment with small variations in the water-to-almond paste ratio to find “your” almond milk).

Step 4: The alchemy of the blender

Turn on the blender at low speed (the high speed of the blender would heat up the mixture, ruining it) and let it work for 1-2 minutes until the almond paste and the (cold, I said!) water are well combined, creating a smooth and creamy blend. This is the magic of almond milk!

Your almond milk is almost ready, just one final touch is needed: strain everything through a fine-mesh sieve or a clean kitchen cloth. This will remove any residues and allow you to obtain a silky and refined almond milk. And irresistible! Wanna bet you’ll finish the bottle in less than a day?
