Step 2: Preparation of the Almond Paste Block

If you have the 35% almond paste block, weigh out 200-250 grams of it. For the 60% almond paste block, 150 grams will be sufficient. After the essential “weighing” step, take your almond paste block and cut it into small pieces: this will help facilitate the “exchange” process between almond and water and allow for quicker dissolution.
